As many of you know I have been vegetarian for over a year now, but most recently I have had to cut out dairy because Logan seems to have trouble digesting it, leaving me with a mostly vegan diet. I say mostly because I still enjoy eggs, honey, and the occasional prawns. With this new diet change I have had to refigure out how to cook using different ingredients and alternatives to some of my dairy loaded favourites like fettucini alfredo and cheesy hashbrowns. Luckily I have a supportive carnivore husband who is open to trying these dishes as long as he continues to have his side of chicken on the side.

Through searching Pinterest I stumbled upon some super tasty recipes, some of which are great vegan replacements for some of my favourite meals from my meat eating days. So whether you’re a lifelong vegan, or trying out meatless Mondays I highly recommend trying out these tasty vegan recipes. I’ve personally tested all of them and can’t wait to make them again.

Irish stew is missed by many converted vegans and vegetarians, but it doesn’t have to be thanks to this great recipe from Sam at It Doesn’t Taste Like ChickenI cooked up a batch and tested it out with Matt and my Mother In Law, and both of these carnivores approved! It combines stout beer (which is also great for breastfeeding mamas like me) with vegetable broth to create that rich and thick texture we know and love. Add in a whole lotta veggies and some spices and you get a delicious vegan Irish stew great for dinners, packed lunches, and your next St. Patrick’s Day party.

Sam also has a ton of other great recipes all geared towards making mouthwatering vegan versions of traditional meals most meat eaters know and love. I’ve been so impressed with the couple of recipes I’ve tried I even purchased her cookbook and can’t wait to make some of my old favourites like french onion soup, cheesy nachos, pizza pockets, and loaded Ceaser salad. Cabbage rolls have always been a favourite of mine, and they’ve been dearly missed since embarking on a plant based lifestyle. Thankfully I found this delicious and filling vegan cabbage roll recipe from Laurel at Catching Seeds. When I cooked them I made a side of potatoes to go with, but Matt and I didn’t even touch them because the cabbage rolls were so good and filling!

When trying out the recipe I recommend using portabello mushrooms for that meaty texture, and you may also want to leave the cabbage to steam for a bit longer than the 10 minutes recommended. We found the cabbage to be a bit tough, but if you steamed it for longer or boiled it instead I’m sure you’d end up with the perfect vegan cabbage rolls.

Pasta is a great dish for vegans, but it can be hard to replicate the creamy texture and flavour of alfredo. There’s lots of cashew recipes out there, but cashews can be really expensive! For a more budget friendly version try out this cauliflower based vegan fettucini alfredo recipe from Sarah at My Darling Vegan. As with the cabbage rolls I recommend using portabello mushrooms (I’m kinda on a portabello kick right now, they’re kind of amazing!), and I also added in some more spices to make it a bit more flavourful.
