Everytime I share these Cajun Shrimp Wraps on my stories I get asked for the recipe so I thought it should have a permanent place here so you can pin the recipe and reference it whenever you are doing your meal planning. They’re easy to make and ready in as much time as it takes for your rice to cook, 30 minute dinners for the win 🙌
These cajun shrimp wraps are a nice light dinner for the summer, and the kids love them when we break them down out of the wrap on their little separated plates.
You can adjust the amount of jalapenos to suit your spice preferences. I keep things fairly conservative so you may want to kick it up a notch if you’re a big spice fan.
Cajun Shrimp Wraps
- 2 lbs shrimp I use a bag of frozen shrimp
- 1 tbsp cajun spice mix add more or less to taste
- 2 mangos cored and diced
- 1 small red onion diced
- 1 jalapeno cored, deseeded, and minced (start with 1/2 a pepper and increase up to 2 based on spice preference)
- 1 tbsp lime juice adjust to taste
- salt to taste
- Wraps I use whole wheat wraps, but whatever you like will do
- white rice
Cook the rice according to package directions
Mix all of the mango salsa ingredients together and adjust levels of lime juice, jalapeno and salt to taste.
Fry the shrimp with cajun spice over medium heat, about 2 - 3 minutes per side until pink all the way through.
Layer rice, mango salsa and cajun shrimp in a wrap and enjoy!
