From time to time I like to whip up a tasty treat and try a new recipe, and these Carrot Cake Donuts did not disappoint! With the Easter holiday approaching these make for a perfect Spring treat to enjoy with the family. Plus, they have tons of carrots so it’s kind of a salad right 😉
We’re not a gluten free household, but I like to lighten up my cooking and baking and normally swap out regular flour for almond flour. Thankfully I had the opportunity to try Coconut Flour through a social media partnership with Bobs Red Mill, and I love it! It has a great consistency and I found the baking to turn out fluffier compared to baking with almond flour. I’ll definitely continue to use it in my baking creations and I recommend you give it a try.

Coconut Flour Carrot Cake Donuts
Ingredients
Carrot Cake Donuts
- 1/2 cup Bobs Red Mill Coconut Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 tsp Nutmeg
- 6 large Eggs
- 4 tbsp Butter melted and cooled
- 1/3 cup Honey
- 1 tsp Vanilla
- 1 1/2 cups Shredded Carrot approx. 3 medium carrots
- 1/2 cup Walnuts roughly chopped
Cream Cheese Icing
- 8 oz Cream Cheese room temperature
- 1/2 cup Salted Butter softned
- 1 tsp Vanilla
- 2 cups Powdered Sugar
Instructions
Carrot Cake Donuts

Preheat oven to 400 degrees and grease two 6-donut pans.

Mix all dry ingredients together in a large bowl (coconut flour, baking powder, salt, cinnamon and nutmeg).

In a seperate bowl mix the wet ingredients together (eggs, butter, honey and vanilla).

Add the wet ingredients to the dry ingredients and mix until well combined.

Fold in the carrots and most of the walnuts (save some walnuts for topping).

Spoon mixture into donut pans and bake for 10 - 12 minutes until the edges start turning golden brown.

Let cool for a few minutes in the pan before transfering to a cooling rack.
Cream Cheese Icing

Mix all ingredients with a mixer. Top carrot cake donuts with cream cheese icing and walnut crumbles.
