This veggie loaded cheeseburger pasta dinner is a family favourite in our house. They love the cheesy pasta and I love that it’s loaded with veggies and fairly easy to cook. It’s one of those meals that you can load up with whatever vegetables need to be eaten from the fridge. This recipe uses onions, mushrooms, zucchini, and canned tomatoes, but don’t feel confined to just that. It’s great with some green bell peppers too!

Cheeseburger Pasta Weeknight Dinner

Weeknights get hectic fast. After a long day of kids and work and juggling all of the mom life things, it’s easy for things to go sideways as dinner’s made. The kids are getting hungry, and patience is getting low, which is why I rely on quick and easy 30 minute weeknight dinners like this Cheeseburger Pasta.

It’s loaded with veggies, but still has that comfort food coziness without slaving away in the kitchen for way too long.

If you have picky eater toddlers like me, you can set a bit of the pasta to the side before adding everything together. Then serve the plain pasta with the cheeseburger pasta and add some cheese and a favourite fruit or veggie so they have those safe foods to fill up on. We always use this method so we’re not cooking separate meals, the kids are fed, and it makes them more likely to try new things.

How to Make Family Favourite Cheeseburger Pasta

Ingredients

  • 500 g uncooked rotini pasta
  • 1 lb ground turkey, or substitute
  • 1 medium white onion diced
  • 1 medium zucchini diced
  • 8 brown mushrooms diced
  • 1 1/2 cups almond milk
  • 2 cups shredded cheddar cheese
  • 2/3 cup BBQ sauce
  • 1/3 cup mustard
  • Season with salt and pepper
  • Top with diced pickles

Start by boiling a pot of water and cook the pasta according to directions.

As the water is boiling cook the ground turkey in a large skillet pan over medium heat. Don’t feel like you  have to use ground turkey. I’ve used Gardein’s Meatless Ground with this recipe and it tastes great, just add it in to the main pan once everything else is mostly done. You could also use ground beef or chicken if you’d like to switch things up.

Once the protein is cooked set it aside and return the pan to the stovetop.

Cook the onions and mushrooms for 2 – 3 minutes, then add in the zucchini. Cook until desired tenderness, roughly 8 minutes. By now the pasta should also be cooked and drained.

Add the cooked pasta and remaining ingredients, excluding the diced pickles, into the pan. Continue to cook over medium heat until sauce thickens, roughly 10 minutes.

Serve with diced pickles on top. This is a step you absolutely cannot skip! It’s just not the same without the pickles.

 

Family Favourite Veggie Loaded Cheeseburger Pasta Dinner

This tasty cheeseburger pasta is a delicous weeknight dinner that the whole family will love. This meal takes 30 minutes or less to cook.

Ingredients

  • 500 g rotini pasta any pasta works, don't feel confined to rotini
  • 1 lb ground turkey or substitute I rotate between meatless ground and ground turkey
  • 1 medium white onion diced
  • 1 medium zucchini diced
  • 8 brown mushrooms diced
  • 1 1/2 cups almond milk
  • 2 cups shredded cheddar cheese
  • 2/3 cup bbq sauce
  • 1/3 cup mustard
  • season with salt and pepper
  • top with diced pickles

Instructions

  1. Boil water and cook pasta according to directions.

  2. Meanwhile, in a large frying pan cook ground turkey and set aside.

  3. Using the same pan, saute onions and mushrooms for 2 - 3 minutes, then add zucchini and cook until tender.

  4. Once pasta is cooked add all ingredients, except pickles, into the large frying pan. Cook on low medium until sauce thickens, roughly 10 minutes.

  5. Serve with diced pickles on top.
