Snack balls are such a great snack to have on hand, and these gingerbread energy bites have the perfect holiday twist for Christmas. They’re quick and easy to put together and with ginger, cinnamon, and maple syrup, they taste oh so good!

No-Bake Gingerbread Energy Bites

We like grab and go snacks that are easy to put together, and these no-bake gingerbread energy bites fit the bill. Just toss all of ingredients in a food processor and mix together until well blended, then roll into balls. They store well in the fridge for easy grabbing when hunger strikes. Just keep them in an airtight container for up to two weeks, although I doubt they’ll last that long!

No-Bake Gingerbread Energy Bites

Ingredients

  • 2 cups Oat Flour
  • 1/2 cup Cashews
  • 1/3 cup Maple Syrup
  • 10 Medjool Dates soaked for 10 minutes, water squeezed out
  • 1 1/2 tsp Ground Ginger
  • 1 1/2 tsp Ground Cinnamon
  • 1 1/2 tsp Ground Nutmeg
  • 3/4 tsp Ground Clove

Instructions

  1. Place all ingredients in a food processor and mix well.

  2. Roll into bite sized balls and store in an airtight container in the fridge for up to two weeks.
