This greek pasta salad made with cheese tortellini is soooooo good. I first tried it at a summer BBQ and my husband and I were instantly hooked! I think I’ve made it every month since. It pairs perfectly with this Greek Baked Chicken and easily prepares ahead of time for a smooth weeknight dinner.

Greek Pasta Salad
The salad dressing is the same from the marinade for the Baked Greek Feta Chicken. To save time you can make a double batch, marinade the chicken, and prep the greek pasta salad. If you’re looking for vegetarian options, this would pair great with falafels or veggie greek burgers, just add tzatziki, cucumber, tomato, and feta, and you’ve got a delicious weeknight meal!
The key to this and any pasta salad is to make sure you let the pasta fully cool before adding the other ingredients, otherwise things can get a little mushy. I learned my lesson with this super tasty Tofu BLT Pasta Salad recipe.
The greek salad dressing is super simple. Just add 1:1 red wine vinegar and olive oil, then add basil, thyme, garlic, and salt and pepper to taste. I’ve given approximations in the recipe below but feel free to play with it a little bit.

Greek Pasta Salad
Ingredients
- Cheese Tortellini
- 1 medium Cucumber diced
- 2 Roma Tomatoes diced
- 1 small Red Onion diced
- 1 medium Bell Pepper diced
- Black Olives optional
- 1/2 cup Crumbled Feta Cheese
Greek Salad Dressing
- 1/4 cup Red Wine Vinegar
- 1/4 cup Olive Oil
- 1/2 tbsp Dried Basil
- 1/2 tbsp Dried Thyme
- Minced Garlic to taste
- Salt and Pepper to taste
Instructions

Cook tortellini according to directions. Cool after cooked.

Meanwhile mix together all of the dressing ingredients.

Once tortellini is cooled mix everything together. Add the dressing last a little bit at a time until you are happy with the flavour.
