When life gives you super ripe bananas you make banana muffins! I don’t know about you, but I always keep bananas on hand for smoothies, and generally a few times a month there are a few straggler bananas that get super ripe before I use them up. Yes, they’ll make your smoothie deliciously sweet, but why waste them on a smoothie when you can make healthy chocolate chip banana muffins instead!
Yes, I say healthy, but they do have chocolate chips, but I say it’s all about balance! What makes this recipe healthy is the swap from granulated white sugar to a reduced amount of liquid sweetener which I recommend doing for any baking recipe. I also added ground flax seeds and chia seeds for some extra omega 3’s, antioxidants, hormone balancing, and they’re good for boosting your milk supply, and you know I’m all about lactation boosting recipes! You could also add 3 tbsp’s of brewers yeast and swap out some of the flour for oats if you really wanted a lactation boost from the recipe.
As with most muffin recipes, this one is super easy to make. All you have to do is mix all of the dry ingredients and mix all of the wet ingredients, then combine them. Pop em in the oven with some cute muffin liners and approximately 20 minutes later you have some super tasty healthy banana muffins! Normally Matt isn’t a fan of things with seeds in them, but he really liked this recipe so I’m holding off on letting him know it has seeds!
Healthy Banana Chocolate Chip Muffins
Healthy muffin recipe filled with flax and chia seeds.
- 1/3 cup honey, agave or other liquid sweetener
- 1/2 cup vegetable or canola oil
- 2 medium ripe bananas mashed
- 2 large eggs
- 1 tsp vanilla
- 1 2/3 cup all purpose whole wheat flour
- 1/4 cup ground flax seed
- 1/4 cup chia seeds
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 cup chocolate chips
Preheat oven to 375.
Mix all of your dry ingredients together (excluding chocolate chips), and mix all of your wet ingredients together.
Combine wet and dry ingredients. Once combined mix in chocolate chips.
Spoon mixture evenly into muffin pan. The recipe should make 12 average sized muffins.
Bake for 18 - 22 minutes or until an inserted toothpick comes out clean and muffins are rounded on top.
Remove muffins from pan and let cool for 5 minutes before serving.
