If you follow along on my Instagram Stories you know that our family loves snack balls. I’ve been making the same snack bite recipe for over a year and it’s time to switch things up a bit. I based this M&M snack bite recipe off my previous recipe with a few simple and tasty changes.
I also changed up the way of preparing them because rolling balls can take ALOT of time, and busy mamas need as much time savers as we can get. So instead of tediously rolling a container full of little balls you can quickly and easily slice a bunch of tiny cubes.
This energy bite recipe is super simple to make. You don’t burn out your processor and make a bunch of sparks like I did – oops! So make sure you soak the prunes so it’s easier for your food processor to chop them. After the prunes are soaked and chopped you just mix all ingredients together, let it sit in a pan to firm up a bit, and then slice into convenient cubes that the whole family can snack on, that’s it!
M&M Snack Bites
These energy bites are super tasty, easy to make, and are a great balance between healthy ingredients like chia seeds, prunes, peanut butter, and oats, with a nice touch of M&M's.
- 2 cup oats
- 1/2 cup chia seeds
- 1 cup natural peanut butter
- 4 - 5 pitted prunes
- 1/4 cup honey
- 1/2 cup M&M's
Soak prunes in water for 10 minutes. Drain and chop in a food processor.
Combine all ingredients in a large bowl, mix well.
Transfer mixture into a parchment-lined 9x9 pan or casserole dish. Pack down and let sit in the fridge for 10-20 minutes.
Using a butter knife to slice into 1-inch cubes. Store in an airtight container.
