Lactation boosting breakfast bars with brewers yeast, oatmeal, and apricots. Make ahead for quick and easy breakfasts on the go or breastfeeding snacks.

Healthy Breakfast Bars

Servings 8 bars

Ingredients

  • 1/2 cup quinoa
  • 2 cups rolled oats
  • 1/4 cup ground flax seed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup spelt can use regular flour or flour of your choice
  • 1 1/2 tsp cinnamon
  • 1 tbsp brewers yeast
  • 1/2 cup roughly chopped almonds or any nut of choice
  • 1/2 cup roughly chopped walnuts or any nut of choice
  • 1/4 cup diced dried apricots or any dried fruit of choice
  • 1/4 cup diced prunes or any dried fruit of choice
  • 1/2 cup shredded coconut
  • 1/4 cup maple syrup honey or any liquid sweetener works too
  • 1/4 cup agave honey or any liquid sweetener works too
  • 2 tsp vanilla
  • 1/2 cup applesauce
  • 1 cup water

Instructions

  1. Preheat oven to 350 and cook quinoa according to package directions.

  2. Mix dry ingredients in a bowl: oats, flax, baking soda, salt, spelt, cinnamon, brewers yeast, nuts, dried fruit, and coconut. 

  3. Mix wet ingredients in a separate bowl: cooked quinoa, syrup, agave, vanilla, applesauce, and water. 

  4. Mix dry ingredients into wet ingredients, and pour into a 9 x 9 baking pan. 

  5. Cook for 20 - 30 minutes. Cool in pan and cut into bars.
