Family Favourite Veggie Loaded Cheeseburger Pasta Dinner

This tasty cheeseburger pasta is a delicous weeknight dinner that the whole family will love. This meal takes 30 minutes or less to cook.

Ingredients

  • 500 g rotini pasta any pasta works, don't feel confined to rotini
  • 1 lb ground turkey or substitute I rotate between meatless ground and ground turkey
  • 1 medium white onion diced
  • 1 medium zucchini diced
  • 8 brown mushrooms diced
  • 1 1/2 cups almond milk
  • 2 cups shredded cheddar cheese
  • 2/3 cup bbq sauce
  • 1/3 cup mustard
  • season with salt and pepper
  • top with diced pickles

Instructions

  1. Boil water and cook pasta according to directions.

  2. Meanwhile, in a large frying pan cook ground turkey and set aside.

  3. Using the same pan, saute onions and mushrooms for 2 - 3 minutes, then add zucchini and cook until tender.

  4. Once pasta is cooked add all ingredients, except pickles, into the large frying pan. Cook on low medium until sauce thickens, roughly 10 minutes.

  5. Serve with diced pickles on top.
