Cajun Shrimp Wraps

Ingredients

Cajun Shrimp

  • 2 lbs shrimp I use a bag of frozen shrimp
  • 1 tbsp cajun spice mix add more or less to taste

Mango Salsa

  • 2 mangos cored and diced
  • 1 small red onion diced
  • 1 jalapeno cored, deseeded, and minced (start with 1/2 a pepper and increase up to 2 based on spice preference)
  • 1 tbsp lime juice adjust to taste
  • salt to taste

Wrap Fixings

  • Wraps I use whole wheat wraps, but whatever you like will do
  • white rice

Instructions

  1. Cook the rice according to package directions

  2. Mix all of the mango salsa ingredients together and adjust levels of lime juice, jalapeno and salt to taste.

  3. Fry the shrimp with cajun spice over medium heat, about 2 - 3 minutes per side until pink all the way through.

  4. Layer rice, mango salsa and cajun shrimp in a wrap and enjoy!
