Healthy Trail Mix Banana Nut Muffins

This healthy trail mix muffin recipe is jam packed full of good for you ingredients helping you get a nutrient packed snack while you’re on the go.

Ingredients

  • 1/3 cup honey
  • 1/2 cup melted coconut oil
  • 2 medium ripe bananas mashed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 2/3 cup all purpose whole wheat flour
  • 1/4 cup ground flax seed
  • 1/4 cup chia seeds
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 cup trail mix

Instructions

  1. Preheat oven to 375.

  2. Mix all of your dry ingredients togethewr (excluding trail mix), and seperately mix all of your wet ingredients together.

  3. Combine wet and dry ingrediets. Once combined mix in trail mix.

  4. Spoon mixture evenly into muffin pan. The recipe should make 12 average sized muffins.

  5. Bake for 18 - 22 minutes or until an inserted toothpick comes out clean and muffins are rounded on top.

  6. Remove muffins from pan and let cool for 5 minutes before serving.
